 Nesler’s Ceciomiso is produced using local chickpeas, whole Sicilian sea salt and water. We do not use soybeans, as we prefer local legumes more suitable for our environment (in this case chickpeas), which are more digestible for us and sustainable for our environment. All processing is done in small batches (20-25 kg) by hand and with great attention This miso with a full aroma reminiscent of chocolate, ages for at least a year, exposed to seasonal variations. In developing this recipe, we were inspired by the "Hatcho miso" that is made in Japan with only soy, without the use of cereals.

In this case we replaced soybeans with chickpeas, obtaining completely unique aromas. Miso is one of the richest foods in the world of "UMAMI", the so-called fifth taste. The other basic flavours are sweet, salty, bitter and sour. In addition to this, miso is rich in live microorganisms of many different species.

The production process involves the production of Koji directly with chickpeas by inoculation with spores of Aspergillus oryzae. This first fermentation lasts about two days and must be monitored constantly, whilst maintaining a controlled temperature and stirring and periodically airing. The Koji is then ground and mixed with salt and water and left to ferment for at least one year, until the desired degree of ripeness

Miso can be used to prepare the classic miso soup, to flavour soups and other foods (similarly to stock cubes), creams and sauces, etc. The only limit is fantasy!

​DO NOT COOK! The live ferments contained in unpasteurised miso are killed by very high temperatures, so it should be added, preferably, at the end of cooking or when cold.
