L'esperienza con i cereali in campo e in cucina, le idee, i discorsi e gli assaggi ci hanno portato a sviluppare un prodotto veramente unico. Una salsa a base di koji di farro monococco, un cereale antichissimo e straordinario. Anche la salsa ha dei sentori inimitabili, è esile e delicata come la spiga del monococco, ma potente come le sue radici. Siamo felici di riuscire a collaborare con altre aziende del territorio, questo è un esempio e speriamo che sia anche uno stimolo per tutti. Salsa Fata is thus a liquid condiment obtained by fermenting Einkorn wheat.

Nesler's Salsa Fata - Cibo Vivo is produced using only Einkorn wheat from Janas, whole sea salt from Sicily and water. All processing is done in an artisanal manner. Maturation time ranges from 6 months to a year, depending on the seasons.

We do not use any legumes for this sauce, which is why its flavour is very intense, but its aromas are more delicate than in other sauces.

The whole process is artisanal and is carried out with great care.  

Salsa Fata can be used to season and flavour both raw and cooked food. It is very interesting on raw fish, tartare and vegetables because it makes their flavour more intense without altering it.

(Possibly) DO NOT COOK! The live ferments contained in unpasteurised products are killed by very high temperatures, so it should be added, preferably, at the end of cooking or when cold. ​

Store in a cool place.

What is most important to us is a high level of respect for Earth and Man and high levels of quality.
We prefer quality to the abstract concept of "local", we prefer to know suppliers, we prefer to strive for quality, rather than passively accept labels. We prefer the small to the big producer and... We are realistic. The compromise is sometimes to go further, rather than to lower the quality level. Our "local" is a "relative local" that makes us use whole Sicilian salt, Tuscan peas, cereals grown in Tuscia, organic hazelnuts grown a few kilometers away, and so on.
