At Nesler - Cibo Vivo, the issue of food waste is very important, which is why we have always worked to reduce waste and scraps to zero over the years. In this case, we have created this “magic powder” using the residues from two different processes that could be seen as useless waste. The K2 sauce filtering residue not only retains much of the original aroma, but also the flavour of the sauce itself. The UmOri used as a base is rich in enzymes, umami flavour and aromas... the result is wonderful. We are really happy with where our research has taken us.
We recommend using BarbOri Ortolano mainly to coat vegetables before cooking them on the barbecue, in the oven or on the grill. We called it Ortolano because it can be used as a BBQ rub and is incredibly suitable for vegetables, although it is also excellent with meat or fish.
BarbOri BBQ rubs are completely different from the usual mixtures of salt, sugar and spices. Umami, enzymes, original flavours... from a simple rub to a dry marinade or pan seasoning... Powders with a thousand uses!

We only use local, selected and controlled raw food materials. We do not use soy, products containing GMOs or synthetic chemicals. All the ingredients used are indicated in the sheets and on the label, with no exclusion.
Our understanding of "local" takes into account the climate and the real movements we make. Furthermore, we try to work with the most conscientious farmers in the area. What we absolutely prefer is to produce raw food materials ourselves.
What is most important to us is a high level of respect for Earth and Man and high levels of quality.
We prefer quality to the abstract concept of "local", we prefer to know suppliers, we prefer to strive for quality, rather than passively accept labels. We prefer the small to the big producer and... We are realistic. The compromise is sometimes to go further, rather than to lower the quality level. Our "local" is a "relative local" that makes us use whole Sicilian salt, Tuscan peas, cereals grown in Tuscia, organic hazelnuts grown a few kilometers away, and so on.
