Ideas, experiences, dialogue and many trials led us to develop a fertile collaboration with Eleonora and Ivan from the Janas farm in Porano (TR), near Orvieto. Experience with cereals in the field and in the kitchen, ideas, talks and tastings have led us to develop a truly unique product. A sauce made with koji from einkorn wheat, a very ancient and extraordinary cereal. The sauce also has inimitable flavours, it is as thin and delicate as the ear of the einkorn, but as powerful as its roots. We are happy to be able to collaborate with other companies in the area, this is an example and we hope it will also be a stimulus for everyone. Salsa Fata is thus a liquid condiment obtained by fermenting Einkorn wheat.
Nesler's Salsa Fata - Cibo Vivo is produced using only Einkorn wheat from Janas, whole sea salt from Sicily and water. All processing is done in an artisanal manner. Maturation time ranges from 6 months to a year, depending on the seasons.
We do not use any legumes for this sauce, which is why its flavour is very intense, but its aromas are more delicate than in other sauces.
The whole process is artisanal and is carried out with great care.
Salsa Fata can be used to season and flavour both raw and cooked food. It is very interesting on raw fish, tartare and vegetables because it makes their flavour more intense without altering it.
(Possibly) DO NOT COOK! The live ferments contained in unpasteurised products are killed by very high temperatures, so it should be added, preferably, at the end of cooking or when cold.
Store in a cool place.

We only use local, selected and controlled raw food materials. We do not use soy, products containing GMOs or synthetic chemicals. All the ingredients used are indicated in the sheets and on the label, with no exclusion.
Our understanding of "local" takes into account the climate and the real movements we make. Furthermore, we try to work with the most conscientious farmers in the area. What we absolutely prefer is to produce raw food materials ourselves.
What is most important to us is a high level of respect for Earth and Man and high levels of quality.
We prefer quality to the abstract concept of "local", we prefer to know suppliers, we prefer to strive for quality, rather than passively accept labels. We prefer the small to the big producer and... We are realistic. The compromise is sometimes to go further, rather than to lower the quality level. Our "local" is a "relative local" that makes us use whole Sicilian salt, Tuscan peas, cereals grown in Tuscia, organic hazelnuts grown a few kilometers away, and so on.
